  • 750 ml vegetable stock

  • Salt, to taste

Step-by-Step Method

 

  1. Warm the oil or butter in a large saucepan over a gentle heat. Add the onion and cook slowly for about 5 minutes until soft and translucent.

  2. Add the garlic and stir for 30 seconds until fragrant.

  3. Add the broccoli florets and diced potato, stirring to combine. Cook for 2 minutes.

  4. Pour in the vegetable stock and bring to a gentle simmer. Cover and cook for about 20 minutes until the broccoli and potato are tender.
