  • 2 garlic cloves, finely chopped

  • 1 x 400 g tin chopped tomatoes

  • 1 tablespoon tomato purée

  • 1 teaspoon dried oregano

  • 1 x 160 g tin tuna in spring water or oil, drained

  • Freshly ground black pepper

 

To finish

  • Grated cheese or a drizzle of olive oil, optional

 


 

Step-by-Step Method

 

  1. Bring a large saucepan of water to the boil. Add a good pinch of salt and cook the pasta according to the packet instructions until just tender. Reserve a mug of the cooking water, then drain.

  2. Heat the olive oil in a frying pan over a medium heat. Add the chopped onion and cook for 5 minutes until soft and translucent.

  3. Add the garlic and cook for 30 seconds, stirring gently so it does not brown.

  4. Stir in the chopped tomatoes, tomato purée, and dried oregano. Bring to a gentle simmer and cook for 8 to 10 minutes until slightly thickened.

  5. Flake the tuna into the sauce and stir gently to combine. Season with black pepper.

  6. Add the cooked pasta to the sauce along with a small splash of the reserved pasta water. Toss until evenly coated.

  7. Remove from the heat and adjust the consistency with more pasta water if needed.
