Method

 

  1. Wash the tomatoes and cut them into small wedges. Set aside.

  3. Heat 1 tablespoon of oil in a wok or frying pan over medium heat.

  4. Pour in the eggs and gently stir until softly set but still moist. Transfer to a plate.
