Ingredients

1.2 litres freshly boiled water

3 tablespoons loose-leaf green tea or 3 green tea bags

Juice of 2 lemons

900 g granulated sugar

1 sachet powdered pectin suitable for jelly
Step-by-Step Method

Brew the green tea
Place the green tea into a heatproof jug or bowl. Pour over the hot water and steep for 3 minutes only. Strain or remove the tea bags promptly to avoid bitterness. -
Combine the base
Pour the brewed tea into a large saucepan. Add the lemon juice and stir gently. -
Add sugar and pectin
Stir the sugar and powdered pectin into the liquid. Heat gently, stirring continuously, until the sugar has completely dissolved. -
Boil briefly
Bring the mixture to a rolling boil and boil for 1 to 2 minutes only. Remove from the heat immediately. -
Jar the jelly
Skim off any surface foam. Pour the hot jelly into warm sterilised jars and seal at once.
Practical Tips

Do not over-steep the tea, as bitterness will carry into the jelly.

The jelly will look pale while hot and become clearer as it sets.
Serving Suggestions
Lovely on toast, spooned onto scones, or served with light cakes and plain yogurt.
Storage and Reheating
Store sealed jars in a cool, dark place for up to 9 months. Once opened, refrigerate and use within 3 weeks.
